Four-course luxury menu
We have divided our menu into a choice of three
or four-course dinners. The three-course dinner is a real banquet,
featuring good food that is guaranteed to satisfy. Our four-course
menu features fresh ingredients that are a bit harder to obtain,
thereby making it slightly more exclusive.
We advise that as we prepare all dishes from
scratch, we are reliant on all members of a group selecting the
same menu.
We are happy to assist with selecting a menu
to suit your individual requirements!
1: Arctic symphony
- Lavvo-smoked wild duck served with lemon sauce and sliced pears
marinated in red wine sauce
- Fresh trout stuffed with cured ham of wild boar served with our
fantastic mustard sauce
- Medium grilled breast of grouse with blueberry sauce
- Warm cloudberries marinated in spicy wild angelica syrup served
in a caramel bowl
2: The hunter´s hare favourite
- Graved halibut with preserved vegetables with aquavit and sour
cream dressing - Hare ragout with bay leaf and clove sauce served
with potatoes and vegetables. A delicious casserole with exciting
spice flavours
- Medium grilled tenderloin of reindeer served with wild mushrooms
and our delicious game sauce
- Wild berry sorbet and blueberry cream
3: Luxury mountain

- Hot smoked fillet of hare with red onion compote and mountain
cranberry
- Seasoned steamed halibut roulade with creamy red pepper sauce
- Whole roasted sirloin of reindeer served with glazed vegetables
and game sauce - Our home-made caramel pudding with cognac and caramel
sauce
4: Line´s forest favourite
- Hot smoked fillet of hare with red onion compote and mountain
cranberry - Pan fried fillet of catfish with Arctic caviar and white
wine sauce
- Tenderloin of moose served with glazed root vegetables and Espen´s
special game sauce
- Home-made "Berries of the Forest" ice cream with berry sauce
5: Ongajok Mountain
Farm Special
- Lavvo-smoked tenderloin of reindeer and blueberry sauce
- Ongajok ham - our popular cured ham of wild boar stored at Ongajok
for 18 months. This specialty is served with trimmings inspired
by Latin traditions
- Fillet of lamb of wild sheep marinated
in juniper beer served with creamed herb sauce and vegetables from
our own garden
- Fresh Finnmark cloudberries and cream
6: The Alta Fiord´s
treasure chest
- The mountain farm´s Pomor ham with mountain cranberry-flavoured
sour cream and butter croutons. Pomor ham is smoked and dried whale
meat of the very best quality. This ham was the creation of our
chef in the winter of 2001. - Smoked fillet of trout marinated in
white wine served with creamy white wine sauce and mountain salad
- Medium grilled breast of duck or goose served with orange sauce
and glazed root vegetables
- Fruit salad and herb cream
7: The Polar Night´s
reindeer favourite
- Graved tenderloin of reindeer and aquavit dressing
- Mushroom soup served with a dash of sour cream and freshly baked
bread
- Reindeer beef served with root vegetables and potatoes

8: Game surprise
- An exciting game buffet comprising four main courses and all the
trimmings, as well as two different desserts
Information about the menu
- All dishes include fresh seasonal vegetables
- We base the potato method on the choice of main course. Options
include baked potato boats, hazel-baked potatoes, cream gratinated
potatoes and boiled potatoes.
- As many of our courses are seasonal, we cannot guarantee that
all dishes will be available at all times.
- Where ever possible, the fish and game are caught by your hosts
at the Ongajok Mountain Farm and it is always prepared here at the
mountain farm.
