Three-course banquet menu

We have divided our menu into a choice of three or four-course dinners. The three-course dinner is a real banquet, featuring good food that is guaranteed to satisfy. Our four-course menu features fresh ingredients that are a bit harder to obtain, thereby making it slightly more exclusive.

We advise that as we prepare all dishes from scratch, we are reliant on all members of a group selecting the same menu.

1. North Calottes treasure chest
- Halibut marinated in ginger served on a bed of lettuce
- Classical reindeer steak served with game sauce and glazed vegetables
- Homemade blueberry ice cream with wild raspberry sauce

2. The royal dinner of the forest
- Graved trout marinated in aquavit served with our delicious mustard sauce
- Moose steak smoked in the lavvo served with game sauce
- Homemade caramel pudding and cognac and caramel sauce

3. Kola Pomors favourite
- Pomor soup, a tomato-flavoured salmon soup. A delicious soup Espen discovered during a trip to a little village on the Kola Peninsula.
- Honey-glazed reindeer beef with game sauce
- Fresh Finnmark cloudberries and cream

4. Kåfjord symphony
- Smoked reindeer filet served with a seasonal salad
- Fresh trout stuffed with ham of wild boar served with our fantastic mustard sauce
-Wild berry sorbet and blueberry cream

5. The mountain farm´s traditional reindeer casserole
- Steaming hot reindeer bouillon served with freshly baked bread
- A traditional reindeer casserole comprising reindeer meat, marrow bone, tongues, potato and vegetables. This is a classic Finnmark dinner popular on dark winter evenings.
- Cloudberry cream in caramel bowls

6. Northern Lights cured wild Arctic char
- Graved fillet of grouse marinated in aquavit served on a bed of lettuce
- Cured Arctic char from Finnmarks mountain plateau served with all the traditional cured fish trimmings like onion, crisp bread, sour cream and potatoes. - Compote of wild berries and our delicious egg custard

7: Espens fish favourite
- Mushroom soup served with a dash of sour cream and freshly baked bread
- Oven baked fiord trout marinated in herbs served with salad and apple and white wine sauce
- Mountain cranberry fromage and blueberry sauce

8: The delicacies of the Mathisdalen valley
- Cured Arctic char from the Finnmark mountain plateau
- Lamb from a wild sheep served with baked potatoes, seasonal vegetables and red wine sauce
- Mountain cranberry cream and wafer biscuits

Information about the menu
- All dishes include fresh seasonal vegetables
- We base the potato method on the choice of main course. Options include baked potato boats, hazel-baked potatoes, cream gratinated potatoes and boiled potatoes.
- As many of our courses are seasonal, we cannot guarantee that all dishes will be available at all times.
- Where ever possible, the fish and game are caught by your hosts at the Ongajok Mountain Farm and it is always prepared here at the mountain farm.
